Chocolate Chip Cookies


I made these chocolate chip cookies with almond flour. They came out a lot fluffier than normal cookies. I really enjoyed them. I’d go a bit easier on the chocolate chips though as the recipe called for a cup and a 1/4 and it was a lot of chocolate per cookie. I got this recipe from here.


  • 1/2 cup butter
  • 1/4 cup coconut oil
  • 3/4 cup brown sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 cups almond flour
  • 1 1/4 cup chocolate chips



Preheat oven to 350. Line a baking tray with parchment paper.

In a large bowl combine butter, sugar and coconut oil. Beat until well combined.

Add eggs and vanilla, beat again.

Add in baking soda, salt and almond flour, one cup at a time. After each addition beat the mixture.

Fold in the chocolate chips and any other nuts or goodies.

Place cookies onto a baking sheet, leaving room for them to rise. Bake for 11 minutes.
